Defachang Dumpling Restaurant
Used to be called De Fa Chang Dumpling Restaurant, De Fa Chang Hotel is located at Anban Street ,beside East-Street of Xi'an. It is hotel which is famous both at home and abroad for its serving dumpling banquets, including Peking flavored dumplings, Qishang roast chicken, Huanggui chou jiu (sweet and thick rice-liquor of golden-yellow cassia), steamed dumplings stuffed with mashed red beans, steamed dumpling stuffed with shrimp. It also has some fine Chinese dishes, such as flowers with fish belly, Jade Hare with shrimp, Qunyanguichao, pine nut with corn, peach kernel with pigeon eggs, phoenix and peony etc.Among all these famous delicacies, Huanggui chou jiu is made following the Xu family's recipe from the Tang Dynasty Court, the liquor ios as white as jade in colour, sweet and fragrant to the taste. De Fa Chang hotel is said to serve the finest Huanggui chou jiu.

Other house specialties include Peking dumplings, steamed sweet bean paste buns, steamed shrimp paste buns, and various uniquely spiced dishes. While guests sample various delicacies, traditionally waiters will explain the cuisine culture of each dumpling.It is thus said “one dumpling one shape, hundred dumplings hundred tastes”. This banquet is a good combination of ancient and modern, court and local dumplings skills.
Defachang has many special dishes, but the dearest is jiaozi made of Shark fin. Another kind of jiaozi as big as a small fingertip filled with chicken meat. It is called a pearl jiaozi and is boiled in a hotpot of chrysanthemum soup.About this, there is a vivid story that when Empress Dowager Ci Xi came to the city she asked her cook to provide her with a new taste, and the cook prepared this kind of jiaozi to please her. It was well received. She ate three, six or nine in number, which is regarded in China as meaning good luck. Today, the words are different, for having one jiaozi, means to go off smoothly, two jiaozi for double happiness coming at the same time. When having jiaozi, you can listen to the story and receive a beautiful blessing.
